Garlic Butter Cod Strips with Sweet Chili Lime Sauce

 

1 pound cod fillets

4 tablespoons butter

4 cloves garlic, minced

¼ cup sweet chili sauce

2 tablespoons lime juice

1 tablespoon fresh cilantro, chopped (I did not use)

Salt to taste

Black pepper to taste

 

 

 

Preheat your oven to 400°F (200°C).

 

·         In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant.

·         Add the cod fillets to the skillet and season with salt and pepper.

·         Cook until the cod is golden on one side, then flip and add sweet chili sauce and lime juice (I mixed these together in a small bowl and then added to cod)

·         Transfer the skillet to the oven and bake for about 10 minutes or until the fish flakes easily with a fork.

·         Garnish with fresh cilantro before serving.
